Coonawarra Cabernet Shiraz

Colour: Brick red with crimson hues
Aroma: A fragrant nose with cedar and chocolate oak, dark black fruits, plums and red berry aromas and supported by hints of mint, dried leaf and subtle spice.
Palate: An opulent palate showing upfront dark berries, plums with a plush and well supported but integrated oak adding to a nicely balanced and textured tannin structure.
Vinification & Maturation:
The Cabernet & Shiraz fruit was fermented in separate parcels in a combination of static fermenters and underwent daily pumping over the skins. Following primary fermentation, the wine was pressed off into tank & barrels for Malo-lactic fermentation and maturation. The separate parcels were held in oak for approximately 24 months, before being blending together to create the finished product.
