Coonawarra Cabernet Sauvignon Platinum

This wine forms part of our Platinum range which are all single vineyard, hand picked and basket pressed reds.
The fruit from the 2011 vintage was fermented on skins and pumped over twice a day to ensure maximum extraction of colour and flavour. The wine was then pressed off while still slightly sweet and pumped to new and used oak barrels. On completion of primary and malo-lactic fermentation the wine was racked off lees and then transferred back to refreshed wood for 18 months of final barrel maturation
Colour: Dark crimson red with purple hues.
Aroma: Red fruits, currants and dried sage and bay leaf
Palate: Dark Berry fruit with black olive & dried herb notes, a vibrant palate with mouth-watering food friendly acidity. A medium to full bodied and elegant Cabernet with fine grained lingering tannins.
